Recent studies suggest there are major differences between organic and conventional food with respect to taste, nutrition and health. For example, in 1 study, organic foods were rated nutritionally superior in 61% the cases tested. They were higher in polyphenols (a type of antioxidant), antioxidants, vitamins and minerals.
The reason given for organic foods being more nutrient dense has to do with:
* The dilution effect ( dilution effect occurs when higher levels of fertilizer is used, thereby having a negative impact on nutrient density in certain harvested foods where dilution of nutrients occur)
* Growth pattern and rate
* Plant defense and its response to stress
*The impact of nitrogen ( common fertilizer) on sugar levels and metabolism
