Living Nutz Mayan Chili Pistachio Ranch Dressing
Preparation time: 23 to 43 minutes; actual kitchen time: 3 minutes
Yield: 2 to 3 pints of dressing
Ingredients: 3/4 cup macadamia or cashew nuts, soaked for 20 minutes or until plumped
up with water
1/2 cup lime, juice and pulp (3 or so limes)
2 tablespoons apple cider vinegar
2 tablespoons good quality Brewer’s or Nutritional yeast
1 heaping tablespoon Living Nutz Mayan Chili Pistachio Nutz
1 garlic clove, smashed
3/4 cup water or more, depending on your preferred thick or thinness for the
Process everything together in a food processor with the ‘S’ blade in place or in a high speed blender. Start with the 3/4 cup of water and thin with more water from that point as you prefer. Use right away and store any leftovers in a clear glass jar, with a label and date, in the refrigerator. It should last for several weeks in the fridge.
