Cherry Tartlets with Vanilla Crème


Makes 12-15 tartlets



1 cup raw macadamia nuts

1 cup unsweetened dried fine shredded coconut

¾ cup agave nectar

3 tablespoons lemon zest

1/8 teaspoon sea salt


Vanilla crème:

1 cup cashews, soaked in water 4 or more hours to soften

¼  cup agave nectar

3 T coconut butter

½  cup orange juice

1 whole vanilla bean seeds scraped

1 T lemon zest

1 T lime zest



1 cup Pitted whole cherries

Mint sprigs or edible flowers (optional)


For the crème, in a high speed blender, blend cashews, agave, juice and vanilla bean until smooth. Fold in lemon and lime zest and chill until ready to serve, at least 1 hour.

For the crust, in a food processor, process all ingredients until finely ground. The mixture should form into a ball when pressed.Using a small 2 or 3 inch tartlet shell, line with plastic wrap, press 2 tablespoons crust mixture in each, remove the tart from the shell and chill.

To serve: Set one tartlet shell in the center of each plate and top with 2 tablespoons vanilla crème. Garnish with cherries and mint or edible flowers.


Lavender Syrup (this is an optional broth to serve if the dish is being plated)

¼ cup dried lavender flowers

1 cup water

1 c agave nectar


Steep the lavender flowers in hot water for 20 minutes, then strain and whisk in agave. Chill until ready to serve. Spoon into the bottom of shallow bowls and top with tartlets
