Pecans have many health benefits as it contains many nutrients, minerals, antioxidants and vitamins that are essential for wellbeing. In Georgia, they are known as the antioxinut.
They are an excellent source of Vit E (known for protecting the skin & mucous membranes from harmful free radicals), beta carotenes, leutin & zeaxanthin (protects the eyes from developing age-related macular degeneration and cataracts.
Pecans are very rich in pyridoxine, more commonly known as vitamin B6, a vitamin important to the regeneration of cells in diseased hearts. Along with vitamin B6, pecans are also a good source of thiamine, zinc, copper, potassium, and iron.

Cous -cous with cranberries and pecans
- 16 oz veg. broth
- 1 tablespoon olive oil
- 1-1/2 cups uncooked couscous
- 1/4 cup dried cranberries, chopped
- 3 tablespoons scallions or chives
- 1 Pkg Living Nutz Cina –Pecan or ½ cup raw pecans.
- In a large saucepan, bring broth and oil to a boil. Stir in the couscous, cranberries and scallions. Remove from the heat. Cover and let stand for 5 minutes or until broth is absorbed. Fluff with a fork. Add nuts.
Tip: for a more nuttier flavor : In a medium saucepan, heat the olive oil on medium heat. Add the couscous and cook, stirring occasionally until slightly browned and aromatic, about 3 to 5 minutes, before adding the rest of the ingredients.
