Quick Kale Avocado Salad with Vegan Cheezy Almonds
This is a wonderful way to enjoy the mighty kale. Many are unfamiliar with raw kale, but working with this method of softening the kale with the other ingredients, not only makes it much easier to digest, but also incredibly delicious.
Serve this recipe with your favorite whole grain, for a great protein packed alkalizing meal.
1 head kale, any variety is great shredded
1 ½ avocado chopped
2 T flax or olive oil
2 T red onion, green onion, or leek fine diced
1/2 lemon juiced
1/2 t sea salt
Diced fresh chillies or pinch of cayenne (optional)
In large mixing bowl toss all ingredients together, squeezing as you mix to ‘wilt’ the kale and creaming the avocado. Add Vegan Cheezy Almonds last. Serve immediately. This dish is also great to substitute the kale for chard, collards, broccoli leaves, spinach or combo of them.
