Living Nutz is excited to release our first nut butter! It is an organic, Non-GMO, truly raw, Paleo-friendly and completely unpasteurized almond butter abounding with delicious wholesome flavor.
Why unpasteurized almonds?
In 2007 Living Nutz (along with all health consumers) hit a major roadblock when the USDA, in conjunction with the Almond Board of California announced to the world that all almonds grown on US soils were to be pasteurized from now on.
What was even more disturbing was the methods of pasteurization that were being suggested and implemented
[This most recent example concerns the new rules by the Almond Board of California (ABC) and backed by the USDA to mandate the pasteurization of all commercially grown almonds in California with substances that include highly toxic propylene oxide (PPO). As reported by the Health Freedom Foundation, propylene oxide is so toxic that it was "...banned by both the National Hot Rod and American Motorcycle Racing Associations, where it had been used as a fuel before being deemed too dangerous."]

Because of all this, Living Nutz was required to find other methods for acquiring truly Raw Almonds, and the only way we could do this was to import them from Italy and Spain. This is what we have been doing since 2007.
While the transportation of exporting almonds means they're coming from further away, the nutritional quality of our almonds increased as the organic almonds we have sourced are closer to the original heirloom varieties of almonds - compared to the California species that have been grafted from species further removed from these original heirloom varieties.
Why do we sprout almond butter?
When you eat raw nuts, it can be very difficult to digest because they are in a state of natural dormancy. There are tannins, phytic acid and other enzyme inhibitors present in the nut that keep them in a dormant state until the spring rains, and moisture of the ground ‘activate’ the nut, giving them an opportunity to grow after winter, and spring time has begun.
By sprouting nuts, we are micro-replicating the very same process that would occur if the nut were in the wild. By soaking nuts, the enzyme inhibitors that keep the nut in a dormant state dissolve, and a transformation process takes place. Suddenly the nut ‘comes to life’ through this sprouting process.
As the enzyme inhibitors dissolve, the phytic acid, tannins and other nutritional blockers also dissolve - allowing the nuts nutritional components to become more bioavailable for our bodies to assimilate and benefit from. This is why a sprouted nut tastes so much better to our palate, and feels much better through our digestive tract, than an un-sprouted or un-activated nut!
