Rethinking the Nut?
In addition to offering organic raw nuts, we have, (since we first opened our store in 2002 ) offered nuts that we soak in water from a pristine, naturally alkaline deep well in Maine (not city water!) for several hours. We then rinse and slowly dehydrate them (never roasted)! Some people call this method sprouting or germinating, others call it activating. It is actually not a new method - the history of soaking and sprouting grains, nuts and seeds is long standing in China, India, Ethiopia, and Europe during pre-industrialization.
There are many health benefits to soaking (germination).
* Enzyme inhibitors get neutralized.
* The amount of vitamins your body can absorb increases. * Digestion is much easier. * * Phytic acid, which inhibits the absorption of vital minerals, is reduced.
After soaking the nuts overnight - we rinse them and (in some products)- flavor (marinate) them or keep them plain. We then dehydrate them at low temps for up to 5 days. The result- a much lighter, easier to digest nut. Crunchy, flavorful and healthy!.
You might say we’ve been soaking our nuts for over 15 years- and yes…we have heard many humorous expressions about this- but humor is medicine as well, so we welcome it!
