Easy, good and nutritious! Any nut would be good, like our Zesty Almonds...but for added green color- pistachios cant be beat. Ingredients:  1cup quinoa, 2 cups veggie broth, 1/4 cup olive oil, 2 limes (juiced), 2 tsp cumin, 1 tsp salt, 1/2tsp red pepper flakes, 1cup halved cherry tomatoes, 1/3 cup pistachios,  1 (15oz) can black beans, 5 scallions, 1/4 cup cilantro, salt & pepper to taste.
