Quinoa salad with pistachios-Living Nutz

Easy, good and nutritious! Any nut would be good, like our Zesty Almonds...but for added green color- pistachios cant be beat.


 1cup quinoa, 2 cups veggie broth, 1/4 cup olive oil, 2 limes (juiced), 2 tsp cumin, 1 tsp salt, 1/2tsp red pepper flakes, 1cup halved cherry tomatoes, 1/3 cup pistachios,  1 (15oz) can black beans, 5 scallions, 1/4 cup cilantro, salt & pepper to taste.


1-Bring quinoa and broth to a boil- then reduce heat to low-med and simmer until tender and all broth is absorbed- around 10-15 minutes

2-Whisk olive oil, lime juice, cumin, salt & pepper flakes in small bowl

3- Combine quinoa, tomatoes, beans, pistachios & scallions in bowl. Pour dressing over and toss. Stir in cilantro, season. Serve right away or refrigerate.
