Raw, Organic & Nuts: Bean salad with mango & avocado

A colorful and unique salad to make for company.

Serves 6

  • 1 small ripe but firm avocados, peeled and cubed

  • 3 tablespoons lime juice, divided

  • ¼ cup red onions (sliced thin)

  • 1 ripe but firm mango, peeled and cubed

  • 1/2 jalapeño, stemmed, seeded and finely chopped

  • ½ red bell pepper, diced

  • 1 teaspoon grated lime zest

  • 4 tablespoons chopped cilantro, plus more for garnish

  • ¼ cup chopped pistachios for garnish

  • 1tsp raw sugar

  • Sea salt, pepper to taste

  • 3 tablespoons extra-virgin olive oil

  • ½ cup corn

  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) white bean (navy- or other)


Gently toss red onion with 2 tablespoons of the lime juice in a medium bowl. After 30 min. add mango, jalapeño, avocado and red pepper and gently toss to combine.

Whisk together remaining 1 tablespoon lime juice, zest, cilantro, salt, pepper and sugar in a large bowl. Whisk in oil until thoroughly combined to make a thick dressing. Add avocado mixture, beans and corn and toss gently. Spoon salad onto plates, garnish with cilantro, pistachios and serve immediately.
